In 2020 we made a Yarlington Mill & Dabinett blend (now all sold out) and having been encouraged by the results, we revisited the style in 2021, with a broader selection of bittersweets from our different orchards. Made in the Rural Method this has a small amount of residual sugar helping to balance the mouthful of lovely tannin which keeps you coming back for more. Aromas are classic bittersweet fruit - spice, ripe apple, orchard floor, leather, copper. This is very drinkable but robust and slightly wild, it's great with really rich food, especially game, mutton, hard cheeses and cheesy dishes. Some of you may have come across Symphony as a draught cider last summer, it was exactly the same blend but this was bottled in the spring and as often happens the tannins tightened up in the bottle while what was left in the tank softened quickly and was drinkable very quickly. The bottles needed time but they have come into their own beautifully now.
