Such a delicious cut.

This is one to cook a little pink, maybe sear then pop into a hot oven with some garlic and rosemary. Years ago in Y Polyn we often served this cut with a garlic and onion sauce.

Jay Rayner had it when he reviewed us and liked the sauce so much he mused about spreading it all over himself. Maybe you don't want to picture that. Here's the recipe.
